This junmai is made with traditional brewing method Kimoto where by air-bourne wild lactic acid bacteria is propagated into the fermentation. It has rich and persistent flavour with a distinct flavour of green melon and nuts.
Less than 10% of sake produced is made using this method making this sake very rare!
